Viking oven repair under the floor and behind the fan
Professional Viking wall ovens hide a 10-pass bake element beneath the oven floor. You never see it glow, so you never see it fail. A weak bake on one of these needs a meter, and that is how we check them on Oahu.

Viking oven quirks that are by design
Several things owners call in about on a Viking wall oven are written into how it works. Ruling them out first saves a visit. If the oven truly will not reach temperature, start with oven not heating.
No visible element
The bake element is concealed under the floor, 10-pass on 5 Series models such as the VSOE530 and 6-pass on the RVL 30 inch.
Top stays dark
In TruConvec only the rear element and fan make heat. The top and bottom elements stay off by design.
Fan runs backward
Vari-Speed Dual Flow turns the convection fan at two speeds and in both directions.
Long locked clean
Self-clean climbs to 750°F, runs about 3 to 3½ hours, then needs another 30 minutes to cool.
Both doors swing
On the VSOF7301 French-door oven, pulling either side opens both, so it works one-handed.
Shut off early
The MVSOC6301 probe switches the oven off once the food is done. Check whether it was in use.
