Gaggenau oven repair

Did your Gaggenau oven switch itself off during a long braise? It may be working as designed. Any heating mode stops after 12 hours without a button press. Sabbath mode is the exception.

What is your Gaggenau oven doing?

Find the line that matches and try the step the BOP 250/251 manual gives. Several are settings or the house supply. The others are worth a call once the simple check fails.

Exxx message

Turn the selector to 0. If the display clears, it was a one-off. A repeat or frozen screen needs service.

Display dark

Check the breaker, or switch the oven's fuse off for about 10 seconds and back on.

No heat, demo icon

The demo symbol means demo mode is on. The display looks normal, yet the cavity never warms.

Stopped after outage

A short power cut is bridged. After a long one, nothing resumes until the selector goes back to 0.

Door will not seal

A heavily soiled gasket stops the door closing properly. Clean it before suspecting the hinges.

Warm cabinet sides

Warm air exits above or below the door. A door left ajar after cooking can damage nearby cabinets.

Pyrolytic cleaning

Why is the Gaggenau door still locked after cleaning?

Because it stays locked until the cavity falls below 390°F. The BOP 250/251 burns soil off at 905°F, and the cycle runs three hours, so many owners time it to end overnight. Once the lock lets go, the residue is ash that wipes out with a damp cloth. A door that stays locked long after the oven is cold, or a cycle that will not start, is a fault worth a visit.

Using the oven

A heat-resistant 60 W G9 halogen bulb, which the manual lists at 230 V. Turn the breaker off first and hold the new bulb with a dry cloth, never bare fingers.
Only up to a 445°F oven setting, because the probe is damaged above 480°F. Use the probe made for that oven and never store it inside.
It is the cooling fan, and running on for a while after cooking is normal.
Most heating modes run from 120 to 550°F, and dough proofing sits lower at 85 to 120°F. If the oven will not hold a setting inside that span, our page on an oven running hot or cold covers the checks that apply to any make before a sensor or element is blamed.
Up to 74 hours, the one mode allowed past the 12 hour shutoff.

Models and history

On the BOP 250/251 it sits on the bottom of the appliance and carries both the product number (E-Nr.) and the production serial (FD-Nr.). Photograph it before booking, along with any code on the display, since the right part depends on both numbers rather than the series name alone.
The whole front is the door: one sheet of 3 mm stainless steel, about 44 lb, over five layers of glass, closed by a soft-close mechanism.
No, the 24 in 200 series is listed as discontinued December 2025.
The first one, the EB375 of 1986, was a personal project of owner Georg von Blanquet, who drew on large American range cookers. It changed little over the next three decades. The heritage page credits the EB 300 with 3.6 cu ft, room for four roasts at once.
Not always. Gaggenau builds them for either a fixed water connection or a tank, and they clean themselves with an inserted cartridge. Ask which setup you have before booking, because a plumbed unit adds the supply line to the list of things to check when steam stops.
